As we saunter into Summer, we look to our Italian trattoria Donna Mare for the much anticipated, endlessly awaited, summer anthem: Ros\u00e8 All Day. so we sat down with the General Manager of Donna Mare<\/a>, Marina Novikova, to chat about the well-rounded ros\u00e8 section of our wine list. <\/p>\n\n\n\n

Where are you from? <\/em><\/p>\n\n\n\n

Russia, Voronezh city.<\/p>\n\n\n\n

How long have you lived in Miami? <\/em><\/p>\n\n\n\n

15 years.<\/p>\n\n\n\n

How long have you been at Donna Mare? <\/em><\/p>\n\n\n\n

3 years, since opening in 2018, I\u2019m a managing partner there.<\/p>\n\n\n\n

What Ros\u00e8 are you excited about as we head into summer and why?  <\/em><\/p>\n\n\n\n

La Chapelle Gordonne. This is a rose that you can drink all day, but it\u2019s really enjoyable with summery food, such as salads and seafood. It is light and fresh, elegantly dry, easy to sip, low acidity but still crisp. It has hints of strawberry, raspberry, grapefruit, citrus, apricot, watermelon and minerals. <\/p>\n\n\n\n

Where is the Gargano Peninsula? And what makes its rose so special?<\/em><\/p>\n\n\n\n

The Gargano Peninsula is a coastal area on the Adriatic Sea in Puglia, an Italian region. Ros\u00e8 from Puglia usually has terrific body and intense fruity notes and darker color with rich salmon, light ruby hues. <\/p>\n\n\n\n

Which is your favorite rose to pair with which Pizza? and\/or which Pasta?<\/em><\/p>\n\n\n\n

All types!!! Ros\u00e8 is incredibly food friendly. I would say La Chapelle Gordonne would pair with Margherita Pizza or Smoked Salmon Pizza or the Mare Speciale Pizza. The Scalabrone I would pair with Linguini Vongole or Spaghetti ai Frutti di Mare.<\/p>\n\n\n\n

What Antipasti would you pair with the sparkling ros\u00e8?<\/em><\/p>\n\n\n\n

With our sparkling ros\u00e8 I would go with the Fresh Tuna Tartare or Shrimp Cocktail.<\/p>\n\n\n\n

What is one thing about drinking ros\u00e8 you think people should know that they might not consider?<\/em><\/p>\n\n\n\n

Firstly, that ros\u00e8 is NOT SWEET! And secondly, that ros\u00e8 wine is not just a summertime wine, it goes well in front of some fire \/ chimenea\u2026 And ros\u00e8 wine can be very complex, age worthy\u2026 A lot of perceptions have changed over the years.<\/p>\n\n\n\n

Anything else you’d like to add about drinking rose at Donna Mare this summer?<\/em><\/p>\n\n\n\n
